This winemaking tale happens in the small appellation of Conca de Barbera, located just a stone’s throw from the Atlantic Ocean in the region of Catalunya. A couple that was brought together by their love of wine. Initially the project was facilitated by “Viver de Celleristes,” a winemaking facility that allowed young entrepreneurs space to create their wines. They eventually moved to a more permanent winemaking residence in a garagiste winery. With them being so new to the Conco de Barbera appellation, other local growers assumed the couple did not know what they were doing as they were using organic methods. Mariona and Albert take part in all the work together. The wines are made in a natural manner, which is progressively becoming more and more of a focus in The New Spain.
Paralleda is one of those varieties that is only grown in a specific place, and that would be in Catalonia, Spain. The grape is known for its tart green apple flavors and for its production in Cava. The fruit comes from a farm with vines over 40 years old. The wine is allowed to ferment spontaneously with natural yeast, and experiences 20 days of skin contact.
