Jacques Lassaigne works in Montgueux, a hill just west of Troyes that sits apart from Champagne’s more famous villages. For years, this area was overlooked, often treated as a source of bulk fruit rather than a place for serious, site-driven wine. Lassaigne saw it differently. He believed the chalk-rich slopes of Montgueux could stand on their own and committed himself to farming and bottling wines that reflected that conviction.
Lassaigne’s background is in the vineyard rather than the cellar. He farms his vines organically, with careful attention to soil health and vine balance, and he harvests later than many neighbors to allow full maturity. His approach has never been about fitting into a Champagne mold. Instead, he focuses on how Chardonnay behaves on Montgueux’s chalk, accepting vintage variation and texture as part of the wine’s identity. Writers often describe Lassaigne as one of the producers who helped bring credibility to the Aube by treating it with the same seriousness historically reserved for the Montagne de Reims or the Côte des Blancs.
Colline Inspirée comes from Lassaigne’s oldest Chardonnay parcels on the Montgueux hillside, planted on deep chalk soils similar in composition to those of the Côte des Blancs. Fruit is harvested by hand and fermented with native yeasts, primarily in stainless steel with some neutral barrel depending on the lot.
The wine undergoes secondary fermentation in bottle and spends extended time on lees before disgorgement. Dosage is kept low. Colline Inspirée is intended as a clear expression of Montgueux rather than a fixed house style, shaped by chalk, ripeness, and Lassaigne’s belief that Champagne should reflect the place and the person behind it.

Hart & Cru is happy to engage the services of a common carrier on behalf of you/the customer. However, upon purchase, ownership of and title to all alcoholic beverages passes from Hart & Cru to you/the buyer in the State of Ohio. In the case of shipments outside of Ohio, the sole responsibility for complying with local regulations lies with the customer. By placing an order on this site and selecting shipping, you authorize Hart & Cru to act on your behalf to engage a common carrier to deliver your order to you.
All ‘Ground Shipping’ orders placed after 12pm on Wednesday will be shipped on Monday the following week in order to avoid bottles being held in non-temperature controlled facilities over the weekend. Orders placed before noon with 2-Day Air selected will be shipped the same day or on the date requested. We are happy to store your order for you until you are able to receive delivery. Please include note specifying desired ship date or reach out to us at thecru@hartandcru.com for any other requests.
The cost of shipping varies depending on which shipping option the buyer selects, as well as destination and number of bottles. The appropriate shipping rates will be calculated at checkout.
All orders will be sent with a 21+ signature as is legally required. The carrier delivering your order will be unable to leave the package on your front door, back porch, etc. without sign-off. Please ensure someone is home to receive. In the event that a shipment cannot be delivered due to an incorrect address provided by the purchaser, or after three delivery attempts by the carrier, Hart & Cru reserves the right to charge the purchaser the applicable carrier fee for rerouting to an alternative address or re-shipping to the same address.
