Variety: Pinot Noir
Jules Lassalle began J. Lassalle Champagne in 1942. After 40 years at the wheel, Jules passed in 1982, where his wife, Olga, and daughter, Chantal took over the winemaking. It was in 2006 that Angeline, the current generation, took the winemaking wheel. With three generations of women under its belt, the winery holds true to its motto, “one woman, one spirit, one style.” All their vineyards come from Premier Cru villages. Importer, Kermit Lynch, was the first importer to invest in smaller production grower Champagne in the 1970s.
More and more Coteaux Champenois are being made due to climate change. This is Pinot Noir coming from vines planted in 1970 from the village of Chigny. The wine ages purely in steel for nine months.
