Since 1818, when Nicolas François Billecart and Elisabeth Salmon were married, the Billecart-Salmon Champagne house in Mareuil-sur-Aÿ has remained under family ownership. Louis Salmon, Elisabeth’s brother, played a key role as the estate’s first head winemaker.
This cuvée is named “Sous Bois”, which translates to “under wood” and refers to its complete fermentation and maturation in oak vessels. The use of wood plays an essential role in shaping its style, adding complexity, texture, and subtle depth.
The blend is typically composed of the three classic Champagne grapes in roughly equal proportions: Chardonnay, Pinot Noir, and Pinot Meunier, although exact percentages may vary slightly depending on the release.
The wine is entirely vinified in oak barrels, with partial malolactic fermentation to achieve a balance between freshness and richness. It then spends approximately 5 to 7 years aging on the lees in bottle before disgorgement, developing layered flavors and refined elegance.
Sous Bois is expressive and complex, showcasing aromas of pastry, dried orchard fruits, and toasted nuts, complemented by delicate spice and mineral notes from its oak influence. It combines freshness and depth, making it an excellent Champagne for those seeking both structure and finesse.

WINE SHIPPING WITHIN THE UNITED STATES
Hart & Cru is happy to engage the services of a common carrier on behalf of you/the customer. However, upon purchase, ownership of and title to all alcoholic beverages passes from Hart & Cru to you/the buyer in the State of Ohio. In the case of shipments outside of Ohio, the sole responsibility for complying with local regulations lies with the customer. By placing an order on this site and selecting shipping, you authorize Hart & Cru to act on your behalf to engage a common carrier to deliver your order to you.
All ‘Ground Shipping’ orders placed after 12pm on Wednesday will be shipped on Monday the following week in order to avoid bottles being held in non-temperature controlled facilities over the weekend. Orders placed before noon with 2-Day Air selected will be shipped the same day or on the date requested. We are happy to store your order for you until you are able to receive delivery. Please include note specifying desired ship date or reach out to us at thecru@hartandcru.com for any other requests.
The cost of shipping varies depending on which shipping option the buyer selects, as well as destination and number of bottles. The appropriate shipping rates will be calculated at checkout.
All orders will be sent with a 21+ signature as is legally required. The carrier delivering your order will be unable to leave the package on your front door, back porch, etc. without sign-off. Please ensure someone is home to receive. In the event that a shipment cannot be delivered due to an incorrect address provided by the purchaser, or after three delivery attempts by the carrier, Hart & Cru reserves the right to charge the purchaser the applicable carrier fee for rerouting to an alternative address or re-shipping to the same address.
