Jacques Lassaigne farms in Montgueux, a chalk hill west of Troyes that sits apart from Champagne’s traditional centers. His family has grown vines there for generations, but Jacques began bottling wine under his own name in the early 1990s, at a time when Montgueux was rarely associated with estate bottled wines. Rather than selling fruit, he chose to commit to the hill itself, convinced that its chalk soils could support serious, site driven wines beyond sparkling production.
Lassaigne works a small estate of just over four hectares, which allows him to manage each parcel directly. His background is firmly rooted in vineyard work. He farms organically, prioritizes soil health, and harvests later than many neighbors to reach full ripeness. While best known for Champagne, Lassaigne has long believed that still wines offer another way to understand Montgueux. His decision to bottle Coteaux Champenois reflects a desire to show the hill without bubbles or cellar framing. Writers often point to his still wines as clear expressions of Montgueux and as an extension of his broader philosophy rather than a side project.
Coteaux Champenois Blanc comes from Chardonnay grown on the chalk slopes of Montgueux. The parcels sit on deep chalk with minimal topsoil, encouraging deep rooting and moderate vine vigor. These vines are farmed with the same attention as those used for Champagne, with hand harvesting and careful selection in the vineyard.
The fruit is pressed and fermented with native yeasts, primarily in stainless steel with some neutral barrel depending on the lot. Aging takes place without new oak, allowing the character of the site to remain central. This wine is bottled as a still white under the Coteaux Champenois designation and is produced in very small quantities. It offers a direct look at Montgueux Chardonnay through Lassaigne’s lens.

Hart & Cru is happy to engage the services of a common carrier on behalf of you/the customer. However, upon purchase, ownership of and title to all alcoholic beverages passes from Hart & Cru to you/the buyer in the State of Ohio. In the case of shipments outside of Ohio, the sole responsibility for complying with local regulations lies with the customer. By placing an order on this site and selecting shipping, you authorize Hart & Cru to act on your behalf to engage a common carrier to deliver your order to you.
All ‘Ground Shipping’ orders placed after 12pm on Wednesday will be shipped on Monday the following week in order to avoid bottles being held in non-temperature controlled facilities over the weekend. Orders placed before noon with 2-Day Air selected will be shipped the same day or on the date requested. We are happy to store your order for you until you are able to receive delivery. Please include note specifying desired ship date or reach out to us at thecru@hartandcru.com for any other requests.
The cost of shipping varies depending on which shipping option the buyer selects, as well as destination and number of bottles. The appropriate shipping rates will be calculated at checkout.
All orders will be sent with a 21+ signature as is legally required. The carrier delivering your order will be unable to leave the package on your front door, back porch, etc. without sign-off. Please ensure someone is home to receive. In the event that a shipment cannot be delivered due to an incorrect address provided by the purchaser, or after three delivery attempts by the carrier, Hart & Cru reserves the right to charge the purchaser the applicable carrier fee for rerouting to an alternative address or re-shipping to the same address.
