Sylvain Cathiard et Fils, Bourgogne Hauts Cote de Nuits 'Aux Chaumes' 2021

Sylvain Cathiard et Fils' domain was established in the 1930's by his grandfather after many years apprenticing at Domaine de la Romanee Conti and Domaine Lamarche. Sylvain's father Andre ran it from 1969 until 1985. Now, Sylvian's son Sebastian has begun to take the reins at this microproducer. He's changed very little save moving away from using new oak to let the terroir shine a bit more. Situated in the village of Vosne-Romanee, the Cathiards make the best of their tiny lot. They may be a small producer, but they are blessed with strong terroir settled into sunny hillsides. The phrases, "fruit purity" and "textural depth" come up a lot when discussing this producer.
This Hautes-Cotes de Nuits comes from the "Aux Chaumes" vineyard, which sits next to their 'Les Dames Hugettes" plot. Situated above Nuit ST. Georges, the hillside is mostly limestone with some clay and stone. Vinified with 100% de-stemmed grapes, the wine is cold macerated for 10 days. It's then spontaneously fermented over 10-30 days, after which it spends 15-18 months in barrel. 20% of the barrels are new oak in this vintage. Unfined and unfiltered, this wine gets a mild sulfur addition after a short malolactic period.

WINE SHIPPING VIA COMMON CARRIER
Hart & Cru is happy to engage the services of a common carrier on behalf of you/the customer. However, upon purchase, ownership of and title to all alcoholic beverages passes from Hart & Cru to you/the buyer in the State of Ohio. In the case of shipments outside of Ohio, the sole responsibility for complying with local regulations lies with the customer. By placing an order on this site and selecting shipping, you authorize Hart & Cru to act on your behalf to engage a common carrier to deliver your order to you.
All ‘Ground Shipping’ orders placed after 12pm on Wednesday will be shipped on Monday the following week in order to avoid bottles being held in non-temperature controlled facilities over the weekend. Orders placed before noon with 2-Day Air selected will be shipped the same day or on the date requested. We are happy to store your order for you until you are able to receive delivery. The cost of shipping varies depending on which shipping option the buyer selects, as well as destination and number of bottles. The appropriate shipping rates will be calculated at checkout.
All orders will be sent with a 21+ signature as is legally required. The carrier delivering your order will be unable to leave the package on your front door, back porch, etc. without sign-off. Please ensure someone is home to receive. In the event that a shipment cannot be delivered due to an incorrect address provided by the purchaser, or after three delivery attempts by the carrier, Hart & Cru reserves the right to charge the purchaser the applicable carrier fee for rerouting to an alternative address or re-shipping to the same address.
