Tokaj-Oremus is an unlikely story of a prominent and internationally acclaimed winery in Ribera del Duero, Spain—the name is Bodegas Vega Sicilia. In an ambition to expand and achieve the best, Vega Sicilia founded Oremus in 1993 in the Tokaj (pronounced tok-eye) appellation of Hungary. This area is famed for the noble rot that happens to the grapes due to the climatic conditions instilled by the Bodrog River, not unlike that of the Mosel or Sauternes. The sweet Tokaj wine is quoted as being “the wine of kings and the king of wines,” famously drunk by many celebrated rulers. Oremus is named for one of the most prized vineyards in the region of the same name. The wines are made by Tokaj master Andras Backsos, who artfully blends the botrytized wines into different cuvees, then utilizes different wood ageing on them.
Production of the aszu, aka shriveled wine is only done in exceptional vintages that produce the noble rot where harvest is a long lengthy ordeal. The harvest would typically begin in late October; grapes are harvested by hand, one by one by the best pickers. The process is repeated multiple times. After harvest, the aszu grapes are macerated in the grape must from the first harvest. The sweetness is measured by puttonyo, 25 liter wooden tubs, added to the base wine. The scale ranges from 3 to 6 puttonyos (sometimes 7) for the aszu style. This has the most botrytized grapes added to the mix making it one of the most special and distinguished wines worldwide. The grapes swell from the maceration, naturally causing a little free-run "eszencia" to be pushed out. After a day or two of macerating, these grapes are pressed and the eszencia gets added back little by little. The wine then ages in small wooden barrels for 2 to 3 years. From the process alone, you can see how Oremus maintains excellence among the king of wines.
