100% Ribolla Gialla, this ancient grape variety originates from the Fruili region in Italy. ITs earliest known mention was from Pope Celestine V in 1296. With its stoney minerality this wine makes an excellent pairing wine. The grapes are fermented whole cluster fermented with native yeast in an open-top tank using punchdowns. After two weeks the must is pressed, and the wine is aged for 18 months sur lees in neutral barrels.
