Jacques Lassaigne farms in Montgueux, a chalk hill west of Troyes that long sat outside Champagne’s center of gravity. His family had grown vines there for generations, but Jacques began bottling wine under his own name in the early 1990s. At the time, Montgueux was largely viewed as a source of fruit rather than a place for estate bottled Champagne. Lassaigne chose to commit fully to the hill, convinced that its chalk soils and exposure could support serious Chardonnay on their own terms.
From the start, his work was shaped by scale and intention. Lassaigne farms a small estate of just over four hectares, allowing him to manage every parcel directly. He farms organically, works his soils to encourage deep roots, and harvests later than many neighbors to reach full physiological ripeness. His approach has never aimed at uniformity. Instead, he accepts variation as part of Montgueux’s character. Writers often describe Lassaigne as one of the figures who helped bring credibility to the Aube by treating it with the same seriousness traditionally reserved for Champagne’s more famous villages.
Clos Sainte Sophie comes from a single enclosed vineyard of approximately one hectare located on the Montgueux hillside. The site is planted entirely to Chardonnay on deep chalk soils and is farmed exclusively by Lassaigne. The clos is vinified separately each year and never blended into other cuvees, reflecting his belief that this parcel stands on its own.
Fruit is harvested by hand and fermented with native yeasts, primarily in stainless steel with some neutral barrel depending on the lot. Secondary fermentation takes place in bottle, followed by extended aging on lees. The wine is released as Brut Nature with no dosage. Clos Sainte Sophie reflects Lassaigne’s conviction that Montgueux Chardonnay, when farmed carefully and given time, does not require adjustment to express its place.

Hart & Cru is happy to engage the services of a common carrier on behalf of you/the customer. However, upon purchase, ownership of and title to all alcoholic beverages passes from Hart & Cru to you/the buyer in the State of Ohio. In the case of shipments outside of Ohio, the sole responsibility for complying with local regulations lies with the customer. By placing an order on this site and selecting shipping, you authorize Hart & Cru to act on your behalf to engage a common carrier to deliver your order to you.
All ‘Ground Shipping’ orders placed after 12pm on Wednesday will be shipped on Monday the following week in order to avoid bottles being held in non-temperature controlled facilities over the weekend. Orders placed before noon with 2-Day Air selected will be shipped the same day or on the date requested. We are happy to store your order for you until you are able to receive delivery. Please include note specifying desired ship date or reach out to us at thecru@hartandcru.com for any other requests.
The cost of shipping varies depending on which shipping option the buyer selects, as well as destination and number of bottles. The appropriate shipping rates will be calculated at checkout.
All orders will be sent with a 21+ signature as is legally required. The carrier delivering your order will be unable to leave the package on your front door, back porch, etc. without sign-off. Please ensure someone is home to receive. In the event that a shipment cannot be delivered due to an incorrect address provided by the purchaser, or after three delivery attempts by the carrier, Hart & Cru reserves the right to charge the purchaser the applicable carrier fee for rerouting to an alternative address or re-shipping to the same address.
