Eleni and Edouard Vocoret founded their domaine in 2017, choosing to work independently rather than fold into the larger family operation historically associated with the Vocoret name in Chablis. They farm around five hectares, all worked by hand, and have intentionally limited their scale so they can remain directly involved in vineyard work and harvest decisions. Edouard grew up in Chablis but chose not to follow established routines, preferring to observe each parcel closely and respond to conditions site by site. Eleni brings a background in hospitality and plays a key role in release timing and communication, grounding decisions in how the wines are actually used.
They are often associated with a new generation in Chablis because of these choices. Rather than changing the region’s identity, they focus on parcel level farming, slower elevage, and resisting pressure to expand. Writers frequently point to their independence and small scale as central to their work.
Forêts is a premier cru on the left bank of the Serein, located just above the river on steeper slopes than many surrounding sites. The vineyard sits on classic Kimmeridgian limestone with high fossil content and thin topsoil, conditions that promote drainage and require careful monitoring through the growing season. Exposure varies across the cru, with cooler air movement from the valley influencing ripening.
Fruit is harvested by hand and fermented with native yeasts. Aging takes place in neutral vessels with some barrel depending on the parcel. New oak is avoided. Bottling is guided by the development of the wine rather than a fixed schedule, allowing the site to define each release.

WINE SHIPPING WITHIN THE UNITED STATES
Hart & Cru is happy to engage the services of a common carrier on behalf of you/the customer. However, upon purchase, ownership of and title to all alcoholic beverages passes from Hart & Cru to you/the buyer in the State of Ohio. In the case of shipments outside of Ohio, the sole responsibility for complying with local regulations lies with the customer. By placing an order on this site and selecting shipping, you authorize Hart & Cru to act on your behalf to engage a common carrier to deliver your order to you.
All ‘Ground Shipping’ orders placed after 12pm on Wednesday will be shipped on Monday the following week in order to avoid bottles being held in non-temperature controlled facilities over the weekend. Orders placed before noon with 2-Day Air selected will be shipped the same day or on the date requested. We are happy to store your order for you until you are able to receive delivery. Please include note specifying desired ship date or reach out to us at thecru@hartandcru.com for any other requests.
The cost of shipping varies depending on which shipping option the buyer selects, as well as destination and number of bottles. The appropriate shipping rates will be calculated at checkout.
All orders will be sent with a 21+ signature as is legally required. The carrier delivering your order will be unable to leave the package on your front door, back porch, etc. without sign-off. Please ensure someone is home to receive. In the event that a shipment cannot be delivered due to an incorrect address provided by the purchaser, or after three delivery attempts by the carrier, Hart & Cru reserves the right to charge the purchaser the applicable carrier fee for rerouting to an alternative address or re-shipping to the same address.
