Thierry Pillot is the fourth generation of the Pillot legacy in the legendary Côtes de Beaune of southern Burgundy. Even though the domain began with Thierry’s great grandfather—Jean-Baptist —the domain was named after Paul Pillot—Thierry’s father. Jean-Baptiste was a barrel maker by trade and began focusing on his vines full time in 1900; the estate was born then. Today the estate is run by the energetic Thierry, who spends most of his time in the vineyards, but is a non-interventionist in the cellar with discreet usage of new wood. The family are artists in the cellar when it comes to oak usage; it is very well integrated into the wines. Thierry is one of the finest winemakers in the Côtes de Beaune; if one should come across any of his bottles, don’t hesitate to snatch them up.
Coming from the Chassagne side of Santenay and blended of two lieu dits that are both over 40 years old. 30% whole cluster and 10% new barrels are used in the making of the wine.

Hirsch Vineyards, Chardonnay Sonoma Coast 2021

Stand above the fog line and glimpse the power of the Pacific at 1500 ft. elevation and you’ll begin to understand what attracted David Hirsch to his extreme site back in 1980. Hirsch was not born into the wine world. Rather he was a lover of pinot noir, more specifically Burgundy, to which I can very much relate. Buying and selling textiles between the US and France, he reached a turning point. The lure of a quiet farm life with his family brought him to Fort-Ross Seaview, on the Sonoma coast, just three hours from San Francisco. The property sits on a ridgeline, cleared of redwoods and fir trees with a climate that is incredibly coastal. Straddling the San Andreas Fault, the soils are intensely complex. Most world class vineyard sites are known for only having a few soils. Hirsch, on the other hand, has 44 different soil types. It should come as no surprise that this is one of the most expressive and important vineyards in the US.
In this rare, sought after Chardonnay from the Hirsch estate is the mentality of creating a wine completely from the expression of the land—fruit and oak coming in second. David Hirsch originally had the crazy idea to plant Nebbiolo at this site, but Burt Williams of Williams Selyem convinced him he was nuts and to plant Chardonnay instead. The vineyard is within the Fort Ross Seaview appellation in Sonoma Coast, complete with sunshine and looming fogs from the coast. Oak ageing involves Austrian and French oak barrels, 27% of which are new.

Isole e Olena, Cepparello 2017

It is not enough to say that Isole e Olena is held to the highest regard and winemaker Paolo de Marchi has an unquestionable vision. Fourth generation winemaker Paolo De Marchi studied Agriculture at the University of Turin and worked harvests in California and France before returning to the family estate in 1976. He found much need for improvement and modernization in the Chianti Classico region. Paolo discovered a way to balance tradition with innovation by planting international varieties. Isole e Olena is named for the formation of the two estates that were purchased by the De Marchi family in the 1950s. He's earned a reputation as “Mr. Sangiovese” and also the “Dean of Chianti.” He sold the estate and completed his last vintage for Isole e Olena in 2022 after 50 years.
This is Cepparello, first produced in 1980. It is widely acclaimed as one of the greatest expressions of Sangiovese today. Here’s one description of the complex 2015 Cepparello: “Shows lots of black cherries, cranberry tea, caramelized orange peel, roasted herbs and citrus peel. Full-bodied with ripe and quite round tannins that frame layers of cherries. Bright and fresh, yet rich and long at the same time. The Sangiovese character really springs out of the glass.”
