Chad Hinds started out as a chef, entering the world of work during the great recession of 2008-09. As a diversifying strategy, he started learning more about wine, then quickly aligned his thinking around the connections between natural food and wine. Chad finished a degree in enology before deciding in 2013 to create a winery, which he calls Methode Sauvage (“wild method”), initially focusing on finding a voice for Cabernet Franc and Chenin Blanc because he loves the grapes of the Loire Valley. As Chad’s interests and capabilities have grown, so has the range of wines he is producing as a sort of wunderkind of natural wines. In true gypsy form, the  winery has taken on a new name, which is now the identity of Iruai.

This wine takes an Alpine inspiration with roots in both the Trinity Alps of northern California and the Shasta-Cascade range of southern Oregon. Considered a mythical winegrowing region even still, it bears much resemblance to the French alpine reds that are grippy and peppery, yet fruity and bitter.

Variety: Pinot Grigio (Skin Contact)

Radikon is so famous that he had to take the sign down from his winery to keep the swarms of tourists at bay. His name is also synonymous with the Friulean wine culture of northern Italy, or you might consider it Slovenian wine culture as his town of Oslavia is right on the border of Slovenia. The name Radikon also brings up the topic of orange wine, also known as skin contact or amber wines. His production process is a slow and careful one though natural to the core and hands off. His approach is so revolutionary that he even incorporated his own bottle sizes, which were his 500ml and 1 liter bottlings. He passed away in 2016, though his family still lives on his dreams for the classics of the region, like Pinot Grigio, Ribolla Gailla and Tocai Friulano.

“Sivi” is the Slovenian term for Pinot Grigio, which makes sense as the fruit comes from Oslavia right on the Italian and Slovenian border. The wine is done in the ramato method, which is particular to Pinot Grigio. When this variety has skin contact, the juice becomes red versus orange or amber.

Varietal: Pinot Grigio

The Maccan family has sustained three generations of winemakers in Friuli Grave, a region located in the northeastern area of Italy. The owner, Stefano Maccan, sums up the family’s vision with this quote, “My family’s passion for farming grew inside me until it became something more than mere curiosity and turned into determination... the determination to finally produce my own family wine.” Even though the Maccan family had been making wine dating back to 1788, it wasn’t until 2012 that Tenuta Maccan was an established domain. The Maccan team pays homage to tradition while innovating with their organic and certified sustainable farming techniques.

This Pinot Grigio has a short skin maceration of 24-48 hours, which imparts a gentle amberish gold tone to the wine. The wine aged further on its lees in stainless steel tanks. It is floral and gently fruity while having a definitive richness, lending itself well to lighter fish and rice dishes.

Daniele Venica purchased the plot Ronco del Ceró where he first planted Sauvignon in 1930. Three generations later, great grandson Giampaolo has taken over the estate, a true testimony to the tradition of keeping winemaking in the family. Venica now has 40 hectares all within the DOC—Denomination of Controlled Origin—of Collio. Sons Gianni (agronomist), Giorgio (cellar master), and grandson Giampaolo oversee operations supplemented by help from several family members. They believe their traditions must be enhanced through continuous research and innovation, but a relationship with nature is of utmost importance.

In the flood of bad Pinot Grigio around the world, there are a few producers that still care about the quality of mainstream grapes. This wine always shows perfume and texture, something that is lacking from most of the wines of Friuli. The grapes undergo 4-8 hours of skin maceration, imparting the coppery color often associated with the wines of this region.

This is an estate wine made from both Chardonnay and Pinot Grigio. It is made as an orange wine. The juice spends four months on its skins in concrete tanks before its ready. This gives the wine more aromatics, a grippier texture, and more potential for ageability.
