Seven Springs Vineyard is historic by Oregon’s standards; the vines were planted in 1984 over layers of volcanic ash. Evening Land’s story begins with the teaming of celebrated wine writer and somm Rajat Paar with his viticulturist friend, Sashi Moorman. These two incredible minds have dreamed up something of a fantasy in the Seven Springs Vineyard of Eola-Amity Hills. Here the vineyard is surrounded by Douglas Fir trees with the Cascades dotting the horizon. Seven Springs is eastern facing, allowing for plenty of sunlight during the day, though winds from the Van Duzer Corridor conveniently keeps the vines cool. Though Pinot Noir and Chardonnay are flagships of the winery, Raj and Sashi continue to experiment with Old World varieties like Dolcetto, Riesling, and Gamay.

Evening Land Winery has completely taken over the Seven Springs vineyard site. The team behind this ambitious project is celebrity sommelier Rajat Parr and winemaker Sashi Moorman. Within Evening Land Vineyards, the duo are also nurturing “experimental” vineyards that are utilized for their Salem and Lompoc Wine Co. labels. Evening Land is currently recognized as one of the top producers in the Willamette Valley of Oregon. The powerhouse team behind these bottles are leaders in the industry, and their wines speak to a sense of place. They are pioneers that have guided many young sommeliers and wine lovers worldwide.
The Chardonnay for this bottling is sourced mostly from the western facing block 9 at Seven Springs. The wine undergoes malolactic fermentation to give it the most mouthfeel. It ages twelve months in neutral oak and six months in tank before bottling.

Seven Springs Vineyard is one of the oldest and most sought-after sites in the Willamette Valley. Al MacDonald planted the vines in 1984 next to the Douglas fir trees that surround the northern section of the property. The vineyard has always been dry farmed and is positioned to capture the cold air from the Pacific that enters the valley through the Van Duzer Corridor, just to the north of the appellation. Rajat Parr and Sashi Moorman are two of the top names in the wine world today, and recently they obtained 100% control of the site. With their vigilant oversight and visionary stance on winemaking, the quality of these wines continues to elevate.

The wines from the Seven Springs vineyard site were planted during 1982 in the region of Eola-Amity. Wines from this appellation show the effects of the cold Pacific winds that are drawn down into the valley through the Vanduzer Corridor. The original rootstock grown in this vineyard is slowly being replanted as phylloxera has spread throughout the old vines. Much care is being put into the selection of new vines and the subsequent farming with a vision to create world-class grapes.
