Pattes Loup means “wolf’s paw” and is the name of the estate of one of the most exciting winemakers to come out of Chablis. Thomas Pico started his estate in Chablis in 2005 inherited from his family. Up until this point, they had been making good Chablis, but nothing with personality or vigor. Fortunately Thomas’ grandfather planted vines on the sides of several steep hillsides, some up to 300 feet in elevation. Thomas decided to go against the wishes of his father, turning the estate into organic farming and utilizing lower yield control, ultimately going for quality over quantity. For such a young winemaker, Thomas is wise beyond his years.

This is a Chablis from an iconic producer that deserves more than its general Chablis designation allows. These vines were planted in 1951, making them almost 70 years in age. The wine is fermented and aged in both concrete and stainless; no oak! Vent d’Ange means wind of the angel.

The Henri Costal project is a recent collaboration between great Chablis winemaker Romaine Collet and American importer, Kermit Lynch. The project is a special ode to Henri Costal, Romaine’s great-grandfather. Both this classic label and winemaking are methods of preserving historical European styles, easy to overlook today. The uniqueness of the Costal Chablis project is its exclusivity to the American market. The project began as a simple barrel tasting and eventually resulted in legendary wines. The Chablis speak to a sense of place with purity and finesse. The label keeps its secret here as the wine is actually made by Domaine Jean Collet, one of the most standout producers in Chablis, a family domaine since 1792.

“Les Truffieres” is a special partnership of the Costal project with winemaker Bernard Raveneau, the master of Chablis. It hails from the vineyard of the same name, which means “Truffles,” just north of the village of Chablis. The result is a vinification in stainless steel, barrel, and foudre, and a wine alluding to an essence of truffles, leading to why the vineyard may have been called “Les Truffieres.”

Guilhem et Jean-Hugues Goisot, Bourgogne Aligote 2022

Variety: Aligote

The Goisot family hails from the small appellation of Saint-Bris, which geographically speaking, is part of Chablis, but was exiled from the appellation after phylloxera. While the history of winemaking in Burgundy dates back centuries, Jean-Hugues Goisot was among Burgundy's earliest fathers of biodynamic viticulture. His son, Guillaume, maintains this rigorous commitment with the family today. The Goisot family knows that in order to be one of the top producers in Burgundy, especially within an appellation that fought long and hard for a share of the spotlight, the wines would need to shine even brighter. They have a firm understanding of the region’s terroir; their wines consistently radiate quality and value.

Aligote is the less popular Burgundy counterpart to Chardonnay, but undeservedly so. Aligote needs less ageing, and is able to be drunk young while many of the regions Chardonnays continue their time in the cellar. This Aligote is aged in stainless steel with a hefty minerality from the clay and fossilized oyster shells below the vines in Saint-Bris.

Agnes did not have this. What she does have is hard work and a belief in what she is doing. Agnes, year after year, makes elegant and delicate wines with a real sense of place. The wines drink exactly as they should for the level of designation and village they represent.

This Chardonnay comes from two different sites—young vines planted in 2015 from a plot in Volnay, and forty-year old vines from a plot in the Hautes Côtes de Beaune. The wine ages in primarily stainless steel, with 15% aged in barrel.

The Goisot family hails from the small appellation of Saint-Bris, which geographically speaking, is part of Chablis, but was exiled from the appellation after phylloxera. While the history of winemaking in Burgundy dates back centuries, Jean-Hugues Goisot was among Burgundy's earliest fathers of biodynamic viticulture. His son, Guillaume, maintains this rigorous commitment with the family today. The Goisot family knows that in order to be one of the top producers in Burgundy, especially within an appellation that fought long and hard for a share of the spotlight, the wines would need to shine even brighter. They have a firm understanding of the region’s terroir; their wines consistently radiate quality and value.

Geographically speaking, Saint-Bris should be categorized as part of Chablis; but it was exiled from Chablis after phylloxera, ultimately shifting its main variety to Sauvignon Blanc. Here’s the meaning behind the bottle’s name: “Exogyra” is an extinct genus of fossil marine oysters dating back to the Jurassic era, deposited deep into the earth under the vines; “Virgula” means comma, referring to the curved shape of the oyster shells. The wine also happens to go remarkably well with oysters.

The Defaix family is a fourth generation of a family of vine-growers rich in personality. Bernard Defaix started the vineyard in 1959 with 2 ha. Vineyard holdings across the Chablis region of Burgundy have expanded to 27 ha including three Premier Cru vineyards (Côte de Léchet, Vaillons and Lys) and others in the Chablis and Petit Chablis appellations. Bernard’s sons Sylvain and Didier have been managing the domain for about twenty years, handling winemaking and vineyard operations, respectively. Didier’s wife, Helene, handles administration and sales. Although this is a small property – common in France – the Defaix family undertook an extensive study of their vineyard soils to better understand vine root systems and the impact of mechanized vineyard operations. From 2012, they have been producing organic wines.

The entry level bottling of the Bernard Defaix family is their Petite Chablis. The appellation generally incorporates vines from the flatter grounds leaving the hillsides for the other Chablis classifications. This Petite Chablis is bottled just 8 months after harvest and aging in stainless steel to ensure freshness and drinkability.

In the portfolio of Kermit Lynch, there are the old reliables; Domaine Roland Lavantureux is the most reliable of the old reliables. Roland is notorious for his no-nonsense personality. One of the best examples of this is in a quote to Kermit himself: “I don’t know why the INAO named some vines ‘Chablis’ and others ‘Petit.’ When I stand in the middle of my vineyard, the row to my left is Chablis, to the right it is Petit Chablis, but you can’t see any difference.” With this mentality, his ability to remain consistent in quality to both Chablis and Petit Chablis is unparalleled. Today, Roland’s two sons have taken over the domaine; Arnaud has taken the task of vines and cellar while David takes the lead in marketing and sales.

The vines for this Chablis come from several sites averaging about thirty years old. The wine is fermented and aged mostly in stainless steel, though 30% of the wine is aged in neutral barrels. This Chablis is meant to be fruity and fresh; the ideal aperitif!

Aude Benoit and her husband Maxime sought to build a project together where they farm just three hectares of vines in the Cote de Beaune. Vines are sourced from three different coveted appellations in the Cote de Beaune; the villages of Beaune, Pommard, and Meursault. This is as small as it gets when it comes to a winemaking entity; there are no other employees working their vineyards other than family members themselves. Small production and difficult to come by.

While this Chardonnay clocks in as a Bourgogne Blanc, though it drinks way above its rank. The vines come from outside the village of Meursault, one of the most famous wine villages in the world. It's fresh and minerally- the perfect aperitif.

The Goisot family knows that in order to be one of the top producers in Burgundy, especially within an appellation that fought long and hard for a share of the spotlight, the wines would need to shine even brighter. They have a firm understanding of the region’s terroir; their wines consistently radiate quality and value.

The Chardonnay vines are sourced from the communes of Auxerre and Saint Bris, both just outside of Chablis. Goisot delivers quality and value above the caliber of Chablis with a wine that is concentrated, yet soft. Fermentation and ageing are completed all in stainless steel.

The Defaix family is a fourth generation of a family of vine-growers rich in personality. Bernard Defaix started the vineyard in 1959 with 2 ha. Vineyard holdings across the Chablis region of Burgundy have expanded to 27 ha including three Premier Cru vineyards (Côte de Léchet, Vaillons and Lys) and others in the Chablis and Petit Chablis appellations. Bernard’s sons Sylvain and Didier have been managing the domain for about twenty years, handling winemaking and vineyard operations, respectively. Didier’s wife, Helene, handles administration and sales. Although this is a small property – common in France – the Defaix family undertook an extensive study of their vineyard soils to better understand vine root systems and the impact of mechanized vineyard operations. From 2012, they have been producing organic wines.

Their Chablis is a more terroir-driven bottle compared to Defaix's Petite Chablis bottling. The vineyards are not sourced from all over appellation, but rather from 12 hectares at the heart of the Chablis vineyards. This bottling, like their other Chablis wines, spends 8 months on its fine lees. There is a more hefty minerality in this wine making it more of a sought after match for particular styles of food, like shellfish.

Côte de Lechet is the name of this 51 hectare vineyard with a west-facing bank all to itself. The Defaix family farms eight hectares of this site and are noted for being the biggest vignerons of this cru. Not only does this site get plenty of sunshine, but there is a plethora of fantastic fossils known as Exogyra Virgula, an extinct variety of fossilized marine oysters that lie at the base of the vines. This is a site that ripens well and early, complimented by the distinct minerals found in its soils. This Premier Cru level Chablis undergoes extensive ageing on its lees and spends some time in neutral oak. Though this wine can be drunk immediately with your favorite fish dish, it will age exceptionally well.

Moreau-Naudet, Chablis 2022

Even though winemaker Stephane Moreau tragically passed away in 2016, the force behind the wines has continued to grow from his wife, Virginie, and assistant winemaker who have taken the reigns of the domaine in Chablis. Their farming is done biodynamically, a style that is seldom seen in Chablis. The team also refrain from using barrel aging on this bottle as they want to retain as much purity as possible in their final product.

This wine comes from two different villages within Chablis; Courgis which has clay-bases soils and Prehy where the soils have more limestone. The vines are 20 to 60 years in age. Aging is done completely in stainless steel while the lees aging takes place between 14 and 20 months.

Roland Lavantureux, Petit Chablis 2022

In the portfolio of Kermit Lynch, there are the old reliables; Domaine Roland Lavantureux is the most reliable of the old reliables. Roland is notorious for his no-nonsense personality. One of the best examples of this is in a quote to Kermit himself: “I don’t know why the INAO named some vines ‘Chablis’ and others ‘Petit.’ When I stand in the middle of my vineyard, the row to my left is Chablis, to the right it is Petit Chablis, but you can’t see any difference.” With this mentality, his ability to remain consistent in quality to both Chablis and Petit Chablis is unparalleled. Today, Roland’s two sons have taken over the domaine; Arnaud has taken the task of vines and cellar while David takes the lead in marketing and sales.

The vines for this Chablis come from several sites averaging about thirty years old. The wine is fermented and aged mostly in stainless steel, though 30% of the wine is aged in neutral barrels. This Chablis is meant to be fruity and fresh; the ideal aperitif!

In the portfolio of Kermit Lynch, there are the old reliables; Domaine Roland Lavantureux is the most reliable of the old reliables. Roland is notorious for his no-nonsense personality. One of the best examples of this is in a quote to Kermit himself: “I don’t know why the INAO named some vines ‘Chablis’ and others ‘Petit.’ When I stand in the middle of my vineyard, the row to my left is Chablis, to the right it is Petit Chablis, but you can’t see any difference.” With this mentality, his ability to remain consistent in quality to both Chablis and Petit Chablis is unparalleled. Today, Roland’s two sons have taken over the domaine; Arnaud has taken the task of vines and cellar while David takes the lead in marketing and sales.

The Chablis Vieilles Vignes is a classically done Chablis, but coming from vines averaging 60 years in age. Some of the wine is aged in 3 to 5 year old barrels while the remainder ages in stainless steel.

These wines are new to Ohio and we cannot get enough of them. Aude Benoit and her husband Maxime sought to build a project together where they farm just three hectares of vines in the Cote de Beaune. Vines are sourced from three different coveted appellations in the Cote de Beaune; the villages of Beaune, Pommard, and Meursault. This is as small as it gets when it comes to a winemaking entity; there are no other employees working their vineyards other than family members themselves. Small production and difficult to come by.

A sparkler with the standards of Champagne, but from vines in the Cote de Beaune. This is Chardonnay with several months on its lees to impart richness and concentration.

The Lescure Domaine is among the newer winemaking families, but just as fierce. Chantal Lescure was begun in 1975 by Chantal and her husband Xavier. They claimed 18 hectares of land strewn throughout Chambolle-Musigny in the Cote de Nuits and the Volnay in Cote de Beaune. Today their two sons coordinate the running of the estate and farm from parcels running from Dijon in the north to Meursault in the south. The Domaine takes organic farming very seriously, as they have been practicing full organics since 2000; they're even certified by Ecocert.

“La Grande Chatelaine” is the name of this cooler plot that’s a bit removed from the rest of the prized Beaune plots. The vines are about 40 years old here. The aging is a lengthier style with up to 8 months of fermentation, and then another 12 to 15 months aging in neutral barrels.

Pattes Loup, Chablis 1er 'Butteaux' 2019

Pattes Loup means “wolf’s paw” and is the name of the estate of one of the most exciting winemakers to come out of Chablis. Thomas Pico started his estate in Chablis in 2005 inherited from his family. Up until this point, they had been making good Chablis, but nothing with personality or vigor. Fortunately Thomas’ grandfather planted vines on the sides of several steep hillsides, some up to 300 feet in elevation. Thomas decided to go against the wishes of his father, turning the estate into organic farming and utilizing lower yield control, ultimately going for quality over quantity. For such a young winemaker, Thomas is wise beyond his years.

Butteaux is part of a Premier Cru that is actually inside of another Premier Cru plot, something that happens more than you would think in Burgundy. The wine undergoes extended lees ageing with indigenous yeasts in older barrels. This wine is focused and opulent.

In October 2002, Hélène Jaeger-Defaix took over her first vineyard in Rully 1er cru Mont-Palais from her great-aunt Henriette Niepce. All of the vineyards are managed organically. She produced her first vintage in 2004, with all the qualities expected of the Rully which achieved AOC status in 1930; ever since she has established a vigorous reputation of producing cool and elegant Chardonnay and ripe Pinot Noir.

This is a Premier Cru vineyard from the appellation of Rully in the Cote Chalonnaise of southern Burgundy. The Chardonnay is aged in oak barrels for 18 months before its release.

All ‘Ground Shipping’ orders placed after 12pm on Wednesday will be shipped on Monday the following week in order to avoid bottles being held in non-temperature controlled facilities over the weekend. Orders placed before noon with 2-Day Air selected will be shipped the same day or on the date requested. We are happy to store your order for you until you are able to receive delivery. The “Gang of Four” is a nickname lovingly bestowed on the most noteworthy winemakers who make Cru Beaujolais. Kermit Lynch christened the name to Jean Foillard, Marcel Lapierre, Jean-Paul Thévenet, and Guy Breton. The significance of this nickname lies far beyond their talents. Before natural wine made its resurgence in the area, Beaujolais Nouveau was the popular choice for years, hitting the tables of many Americans’ Thanksgiving tables every November. Enter Kermit Lynch—he began to import the crus made by the Gang in the 90s. Jean-Paul Thevenet played a major role in returning Beaujolais to its roots by starting with old vines, eliminating synthetic herbicides or pesticides, harvesting late, rigorously sorting for the healthiest grapes, and minimal doses of sulfur or none at all.

This label is separate from father Jean-Paul’s original Morgon project; instead father and son Charly collaborate for this label based out of the neighboring village of Regnie. While they have the same approach in the vineyards and cellar, the outcome is noticeably different. The Morgon wines are rich and plush while the Regnie is spiced and textured.

While Beaujolais is known for its red wine, it also produces quite a bit of Chardonnay, aka known as Beaujolais Blanc. While the name of this wine deceives us into thinking it’s a red wine, “terrain rouge” refers to the red earth of clay and limestone under the vines. The wine ages in both tank and small demi-muid barrels.
