Athénaïs of Chateau de Beru is one of the most discussed producers in Burgundy today. Coming from a domain with 400 years in the making, she leads the current generation of this property. The chateau has certainly experienced its ups and downs. As phylloxera devastated the family’s vines, new ones were not planted for almost 100 years. The fruit was sold to other Chablis co-ops up until 2004 when the death of Athena’s father happened. She traveled back to the domaine to assist her mother, Laurence. It was then that she began incorporating all sorts of changes. The family began bottling their wine, converted agriculture over to biodynamic, and opted to intervene minimally in the winemaking. The reputation is only improving and Beru has become known for their Chablis wines. ‘Athenais’ is the name of her negociant project, though still intertwined with the family domain.
While Chablis is known for its Chardonnay grown in kimmeridgian soil, it also grows Sauvignon Blanc that will often get bottled as 'Saint Bris' instead of Chablis. The wine is fermented in steel and ages in six months in old barrels.

Bernard Defaix, Chablis 1er Cru Cote de Lechet 2019

The Defaix family is a fourth generation of a family of vine-growers rich in personality. Bernard Defaix started the vineyard in 1959 with 2 ha. Vineyard holdings across the Chablis region of Burgundy have expanded to 27 ha including three Premier Cru vineyards (Côte de Léchet, Vaillons and Lys) and others in the Chablis and Petit Chablis appellations. Bernard’s sons Sylvain and Didier have been managing the domain for about twenty years, handling winemaking and vineyard operations, respectively. Didier’s wife, Helene, handles administration and sales. Although this is a small property – common in France – the Defaix family undertook an extensive study of their vineyard soils to better understand vine root systems and the impact of mechanized vineyard operations. From 2012, they have been producing organic wines.
Côte de Lechet is the name of this 51 hectare vineyard with a west-facing bank all to itself. The Defaix family farms eight hectares of this site and are noted for being the biggest vignerons of this cru. Not only does this site get plenty of sunshine, but there is a plethora of fantastic fossils known as Exogyra Virgula, an extinct variety of fossilized marine oysters that lie at the base of the vines. This is a site that ripens well and early, complimented by the distinct minerals found in its soils. This Premier Cru level Chablis undergoes extensive ageing on its lees and spends some time in neutral oak. Though this wine can be drunk immediately with your favorite fish dish, it will age exceptionally well.

Bernard Defaix, Chablis 2022

Vineyard holdings across the Chablis region of Burgundy have expanded to 27 ha including three Premier Cru vineyards (Côte de Léchet, Vaillons and Lys) and others in the Chablis and Petit Chablis appellations. Their Chablis is a more terroir-driven bottle compared to Defaix's Petite Chablis bottling. The vineyards are not sourced from all over appellation, but rather from 12 hectares at the heart of the Chablis vineyards. This bottling, like their other Chablis wines, spends 8 months on its fine lees. There is a more hefty minerality in this wine making it more of a sought after match for particular styles of food, like shellfish.

Costal, Chablis 1er Cru Vaillons 2014

The Henri Costal project is a recent collaboration between great Chablis winemaker Romaine Collet and American importer, Kermit Lynch. The project is a special ode to Henri Costal, Romaine’s great-grandfather. Both this classic label and winemaking are methods of preserving historical European styles, easy to overlook today. The uniqueness of the Costal Chablis project is its exclusivity to the American market. The project began as a simple barrel tasting and eventually resulted in legendary wines. The Chablis speak to a sense of place with purity and finesse. The label keeps its secret here as the wine is actually made by Domaine Jean Collet, one of the most standout producers in Chablis, a family domaine since 1792.
Vaillons is a Premier Cru site, one of Chablis’ most well known vineyards. Vines here are thirty years in age based in the well-known kimmeridgian limestone that represents Chablis. Ageing of this wine is completed between stainless and various sized barrels.

The result is a vinification in stainless steel, barrel, and foudre, and a wine alluding to an essence of truffles, leading to why the vineyard may have been called “Les Truffieres.”

Pattes Loup, Chablis Vaillons 1er Cru 2019

Pattes Loup means “wolf’s paw” and is the name of the estate of one of the most exciting winemakers to come out of Chablis. Thomas Pico started his estate in Chablis in 2005 inherited from his family. Up until this point, they had been making good Chablis, but nothing with personality or vigor. Fortunately Thomas’ grandfather planted vines on the sides of several steep hillsides, some up to 300 feet in elevation. Thomas decided to go against the wishes of his father, turning the estate into organic farming and utilizing lower yield control, ultimately going for quality over quantity. For such a young winemaker, Thomas is wise beyond his years.
This Chardonnay comes from a tiny plot of old vines in the Premier Cru plot of Vaillons. This fruit is farmed by another grower, though picked and handled by the Pattes Loup team. The wine is aged for two years; one in a mix of older barrels and cement, then the second year in the bottle before it is released.

Raveneau, Chablis 1er Cru 'Foret' 2018

If you asked a Burghound, or any serious collector what Burgundy wines they’re after, Raveneau just might grace that list. The wines are almost impossible to find as they are the most celebrated domaine in Chablis, and certainly at the top of the world’s best producers. When the domaine was founded in 1948, Francois Raveneau, whose wife was of the Dauvissat family, spent much time acquiring some of the best parcels in Chablis. It was no small feat as today the domain is almost entirely composed of Grand Cru and Premier Cru holdings. During the 1940s, when much of Europe was recovering from the war and the pursuit to bring in money, the family’s style remained far superior to the popular conventional wines of that time. The family were one of just a couple to bring the style of the Cote d’Or to Chablis; barrel fermentation and longer lees aging. On top of all this, their secret is in their prized vines and the superb ageability of them, any of which should age for 8 to 10 years before enjoying. If you have the ability to collect any Ravenau bottles (ever), do so!
For a Premier Cru site, the vines are a little younger than the usual standard for Raveneau, clocking in at 15 years. The wine goes on to age in older oak barrels for 18 months. A wine to treasure and age for years.
