Quentin is the eighth generation of his family in Oger, but the move away from the local cooperative gave him the chance to make wines that really put the village and its vineyards front and center. They farm organically and biodynamically, work with old vines and massal selections, and take a pretty hands-off approach in the cellar.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThis comes from a single parcel in Chouilly, planted to Chardonnay in 1964 from massal selection. The vines sit in about 1.2 meters of brown clay over belemnite chalk, with a northeast exposure. The fruit is gently pressed and fermented naturally with indigenous yeasts in oak barrels, where it spends about 12 months on its lees. There are no added sulfites, fining, or filtration, and it is bottled under cork before spending another 36 months aging in the cellar. \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eBrut Nature means 0 g\/L dosage\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, so nothing is added at disgorgement.
