He's changed very little save moving away from using new oak to let the terroir shine a bit more. Situated in the village of Vosne-Romanee, the Cathiards make the best of their tiny lot. They may be a small producer, but they are blessed with strong terroir settled into sunny hillsides. The phrases, \"fruit purity\" and \"textural depth\" come up a lot when discussing this producer.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eSourced from several village level parcels on the lower slopes of Vosne Romanée. The fruit is fully destemmed and undergoes a cold maceration of about 10 days before a native yeast fermentation in tank lasting roughly 10 to 20 days, with no sulfur added during fermentation.
