He's changed very little save moving away from using new oak to let the terroir shine a bit more. Situated in the village of Vosne-Romanee, the Cathiards make the best of their tiny lot. They may be a small producer, but they are blessed with strong terroir settled into sunny hillsides. The phrases, \"fruit purity\" and \"textural depth\" come up a lot when discussing this producer.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eThe 2023 Sylvain Cathiard et Fils Bourgogne Hautes Côtes de Nuits is made from 100 percent Pinot Noir grown on clay and limestone soils in Villars Fontaine, at roughly 350 meters of elevation. The fruit is fully destemmed before fermentation, followed by a relatively long maceration of approximately 22 to 30 days to build structure and aromatic depth. The wine is then aged for 18 months in French oak barrels, with about 20 to 25 percent new oak, allowing for gentle integration of texture and spice without overwhelming the fruit.
