Sebastien Riffault is winemaker and owner of his eponymously named domaine in the appellation of Sancerre in the Loire Valley. White wine of this area is made from Sauvignon Blanc, typically made into a fresh, minerally, citrusy style. One certainly wouldn’t think of Sancerre to shake things up, but that is just what Sebastien has done with his two hectares in Sury-en-Vaux. His father is winemaker Etienne Riffault with vines firmly rooted in his upbringing. The difference between Sebastien and other winemakers is his approach in both the vineyards and his winemaking. While many in Sancerre still use chemicals in the vineyards and manipulate the wines, Sebastien has chosen to take the unpopular route with his efforts to be certified organic. The winemaking is done naturally and skin contact is implemented making for a geeky style of wine that is unique, yet enchanting.
The distinguishing factor between ‘Sauletas” and Sebastien’s other Sancerres is that this fruit grows in pure limestone soils. Harvesting is completed with botrytis! It spends a lengthy time in the cellar. The juice spends two years in used oak barrels and then two years in bottle with no filtering or sulfur.
