While other vignerons in Saumur are pumping as much synthetic fertilizer into the vineyards as possible, Thierry is using compost when necessary, forcing the grapes to suffer, resulting in lower yields and complex pure wines. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e\u003cspan style=\"font-weight: 400;\" data-mce-fragment=\"1\"\u003e“La Marginale” is only produced in excellent vintages, much like vintage Champagne. The vines are 50 years in age and planted to clay and limestone. The fruit is completely destemmed, offering a fresher and softer mouthfeel experience.
