Sashi Moorman has been making Syrah in the Central Coast for about two decades. Among the talent pool in modern California winemaking, Sashi is squarely at the forefront. With Piedrasassi, one of his several West Coast winemaking projects, Syrah done in a rather Old World style is his medium. Along with Syrah, Piedrasassi also creates bread on site, an ode to the agricultural traditions of the region. Together, bread and wine represent the sacred symbols of both culture and religion while clearly making for a pairing almost as old as time. Sashi operates the Piedrasassi with Melissa, and her daughter, Juliet, who make the bread and tie the entity together.
Bien Nacido lies in a cooler microclimate, and this wine comes from two of its best, old vine blocks, X and Z. A slower ripening process adds elegant restraint…speaking of time, decanting for a couple hours is recommended to unveil its savory complexities.
