The family is an old cooperage, barrel-making family that has 13 hectares of vines. Jean-Baptiste Pillot, the founder, decided to work full-time in the vines instead. Four generations later, Thierry, the newest family member to take over the estate, is a dynamic personality that is pushing quality higher and higher. Most of Thierry’s time is spent in the vineyards, as he is a non-interventionist in the cellar, though he does use a discrete amount of new wood. The family are artists in the cellar when it comes to oak usage; it is very well integrated into the wines.
This is one of the top sites in Chassagne. The vines are a little younger than the other Pillot wines, which range from about 35-60 years in age. 'Les Grandes Ruchottes' was just planted in 1997 in a limestone dominant soil. The wines ages in used barrels for one year and then in tank for another six months.
