Variety: Sauvignon Blanc
There is some rivaling energy in the Cotat family. The two brothers, Francis and Paul, both made the same wine in the same facility, but under their own names. The entire purpose of this was for the brothers to each have their own name on their wines. Eventually, the French government intervened and declared the production needed to be separated. Pascal and Francois, both the sons of the original brothers, thus decided to separate their winemaking facilities. Pascal opted to make his own new facilities and subsequently makes unique wines that are slightly riper and more minerally than his brother’s. The sites used are the most prized spots in Sancerre.
This is one of the most prized vineyards in all of Sancerre. There, the vines are more than 45 years old. Unlike more traditional Sancerres, which would typically be aged in steel or concrete, this is both aged and fermented in older barrels.
