Even though Stephane passed away in 2016, the force behind the wines has continued to grow through Virginie, who has taken the reins of this domain in Chablis, steering it with elegant control. Farming is completely biodynamic, something seldom seen in Chablis. Moreau-Naudet limits the use of barrel aging, opting for just 10-30% of the juice seeing wood on most bottlings. The wine sees a \u003c\/span\u003e\u003cspan\u003elong maceration on lees. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAcross a valley from Vaillons, Montmains comes from 70 year old vines sitting on another tiny parcel of 0.65 hectares.
