His own winemaking story started when he was just ten, when Josko Gravner gave him some Ribolla Gialla and a Georgian amphora and told him to make wine. These days, Mitja divides his time between the family restaurant and eight vineyards spread across the Collio, Colli Orientali, and Slovenian Brda, working with organic and regenerative farming.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cmeta charset=\"utf-8\"\u003eMeden comes from a single vineyard in Lonzano, in the southern part of Dolegna del Collio. The vines are around 60 years old and sit on ponca, the local mix of marl and sandstone, with an eastern exposure and cooling influence from the mountains. The grapes are fermented spontaneously and aged in used tonneaux on the fine lees until bottling in May, followed by another year of bottle aging.
