These days, Mitja divides his time between the family restaurant and eight vineyards spread across the Collio, Colli Orientali, and Slovenian Brda, working with organic and regenerative farming.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe 2024 brings together Friulano from those different vineyards, with the fruit harvested and fermented separately before being combined later in the cellar. Fermentation happens spontaneously in stainless steel, followed by malolactic fermentation and aging on the fine lees through the summer. It’s bottled unfiltered and carries the wonderfully broad \u003c\/span\u003eVino Bianco Europeo\u003cspan\u003e designation rather than a specific DOC.
