A resident of Verrains in the heart of the appellation, he hobknobs with his rockstar neighbors Antoine Sanzay and Thierry Germain and his vineyards are next to Clos Rougeard. Domaine Le Petit Saint Vincent cultivates 13 hectares, with only 1 hectare not devoted to Cabernet Franc. These vineyards are spread over soil rich in clay, limestone and deep tuffeau. Dominique Joseph took over the production in 1990 and worked towards organic certification, which was awarded in 2010. \u003c\/p\u003e\n\u003cp\u003eUsing 100% de-stemmed fruit, the must undergoes a 22-30 day maceration in concrete vats and fermented under temperature control. Constant attention is paid in order to extract tannin and color to the desired degree. After fermentation the wine is aged in 225 L 2-4 year old barrels for 12 months.
