With stints as wine director for Thomas Keller’s Bouchon, and former assistant winemaker for Pax Wines, this formulated the plan for his future winemaking endeavors. Jolie Lade is a loose term for Pretty-Ugly, a French term that lends itself well to the unconventionally beautiful styles of Scott Schultz. He takes classic French varieties, many of them uncommon in the states, and raises them to be beautiful wines. Scott is a one-man operation (of both hands and feet) and does it well.

The 2025 comes from cooler vineyard sites in Northern California where longer growing seasons help preserve acidity and keep the fruit restrained. Fermented with native yeasts and handled gently in the cellar, the wine sees a mix of stainless steel and neutral oak aging to build texture without overwhelming the vineyard character. The result is light to medium-bodied, with a more savory and structured interpretation of Pinot Gris than the richer styles often associated with the variety.
