The almost vertical vineyards have forced him to become part winemaker, part mountain climber. Pedro took over the family estate known for making some of the best wine in the small town that was only sold and consumed at the local cantinas. Pedro has moved them into a new direction though, growing some of the best Mencia in the Ribera Sacra. He has converted the winery to much smaller crops, organic certification, and truly sustainable agriculture.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cspan\u003eThese 40 to 60 years old vines come from a six hectare plot in Amandi. Primarily Mencia, this is a blend with at least seven other field varieties. All harvested together, the grapes are spontaneously fermented whole cluster for a 40 day maceration. Half was aged in large foudre and the other half was aged in barrel.
