Guillaume and Aude Lavollée are unlike any other Burgundy producer operating today. Not only has their family been operating for four generations, but they also produce A LOT of wine from over 30 appellations. Though they are making this diverse range of wines, the level in which they’re being made is unparalleled. Guillaume and Aude have taken their farming practices to the next level by certifying the domain as organic, while they continue to experiment with biodynamic. Their formula is all about focus in the vineyards in order to minimize work in the cellar, a philosophy that’s rather unique for the spectrum of wines produced.
“Greves” comes from the Latin word “grava” which refers to all manner of gravel. The site is one of the largest vineyards in all of Beaune, meaning the soils range drastically. This parcel was planted over a period of time between the 60s and 80s. The vines come from the mid-slope where the altitude is the steepest.
