Jean-Phillipe Fichet is about as meticulous as one gets in the world of Burgundy. Home base is in the appellation of Meursault where terroir is at its peak in intensely stony soils and vines are forced to dig deep due to the low water tables. Meursault was known for bottling according to standard Burgundy classifications, though it was not lost on Jean-Phillipe the level of terroir with which he was working He decided to bottle his crus individually even though they didn’t warrant a classification. He drew attention, not only to Mersault, but also to the idea that one could still bottle a lieu dit with expression. His cellar is immaculately clean; his work in the vineyards often keeps him there from dawn until nightfall. Though he has been making wine for thirty years, his work continues to get better and better.
These Aligoté vines are sourced from vines in the village of Meursault. His expression of this variety is considered some of the freshest in the Cote d’Or. The wine is fermented in both tank and barrel, then finishes in tank. Aligoté gets less attention than Chardonnay, but deserves just as much due to its intensity and liveliness.
