Hubert chooses a bold and structured style for his Burgundy while Georges goes for delicate and seductive. The domain is now led by Georges’ nephew, Benoit, who worked under his uncle for an entire decade before gaining control of the vines or cellar in 2008. Benoit’s approach is very much traditional; he aims for aromatic concentration over color or structure. His usage of barrel aging is a timeless example of Burgundy tradition; older barrels are used for the Villages level wines while some new oak is used for the crus.
