The family is an old cooperage, barrel-making family that has 13 hectares of vines. Jean-Baptiste Pillot, the founder, decided to work full-time in the vines instead. Four generations later, Thierry, the newest family member to take over the estate, is a dynamic personality that is pushing quality higher and higher. Most of Thierry’s time is spent in the vineyards, as he is a non-interventionist in the cellar, though he does use a discrete amount of new wood. The family are artists in the cellar when it comes to oak usage; it is very well integrated into the wines.
This is a Premier Cru plot coming from the highest altitude in Chassagne from 35 year old vines filled with tons of limestone. This is aged in large barrels, 10% of which is new, for one year, and six months in tank.
