Hervé Dubourdieu is a charming, though modest and diligent winemaker. The winery of Roûmieu-Lacoste dates back to 1890 on his mother’s side. Hervé also owns Châteaux Ducasse and Graville-Lacoste both situated in the region of Bordeaux. The Graville-Lacoste winery sources fruit from the Graves appellation. His manner is meticulous as he pays the vineyard helpers double what the average vineyard worker is paid. The reason being for this is that so much of the fruit experiences the region’s well known noble rot; if just one grape affects the rest in a basket, he will be sure it is unused. His attention to detail is seen in the ending result of the wines.
This is a hand harvesting from the oldest vines in the site, which are 45-60 years in age. The fermentation of the wine takes place in Hermitage barrique barrels, then goes on to age in new oak for an additional eight months. This unique wine yields just eight barrels; four of them complete malolactic fermentation while the others do not; these eight barrels are then blended together.
