John and Phoebe Raytek have come into their own in northern California. The family keeps busy amidst their many responsibilities. Though they do not own any vineyards, Phoebe, as the Ceritas farmer, still spends much of her time at their many sites, some of them monopole vineyards, and forming relationships with the growers who own them. There is an immense focus on organic and sustainable farming methods. John is the winemaker of Ceritas, spending much of his time in the cellar and in the vineyards. The couple prides themselves as students, and the vineyards their teachers; it is their job to listen and learn from each site. They believe, “it is more important to know what not to do, than what to do,” effectively summarizing the belief of allowing the wine to speak for itself.
This is a blend of several vineyard sites from the Sonoma Coast, including the famous Occidental site. The wine is aged for 12 months in wood, about 25% of which is new French oak. The wine then goes back into barrels for another 3 to 6 months before its release.
