John and Phoebe Raytek have come into their own in northern California. The family keeps busy amidst their many responsibilities. Though they do not own any vineyards, Phoebe, as the Ceritas farmer, still spends much of her time at their many sites, some of them monopole vineyards, and forming relationships with the growers who own them. There is an immense focus on organic and sustainable farming methods. John is the winemaker of Ceritas, spending much of his time in the cellar and in the vineyards. The couple prides themselves as students, and the vineyards their teachers; it is their job to listen and learn from each site. They believe, “it is more important to know what not to do, than what to do,” effectively summarizing the belief of allowing the wine to speak for itself. The grapes are sourced from the Santa Cruz Mountains and West Sonoma Coast for their Chardonnay, Pinot Noir, and Cabernet Sauvignon.
This is a well-liked site sitting somewhere between Hirsch vineyard and Hellenthal. The soil type here is exactly what one wants in a Pinot Noir vineyard- shale, marine sediment, and a bit of clay. Elliott is a unique site because of the way it straddles the ridge, facing both north and south. For this, Elliott undergoes multiple harvests due to its fruit ripening at different times. This is another monopole vineyard from Ceritas. Their standard for minimal cellar intervention continues with the Elliott vineyard.
