John and Phoebe Raytek have come into their own in northern California. The family keeps busy amidst their many responsibilities. Though they do not own any vineyards, Phoebe, as the Ceritas farmer, still spends much of her time at their many sites, some of them monopole vineyards, and forming relationships with the growers who own them. There is an immense focus on organic and sustainable farming methods. John is the winemaker of Ceritas, spending much of his time in the cellar and in the vineyards. The couple prides themselves as students, and the vineyards their teachers; it is their job to listen and learn from each site. They believe, “it is more important to know what not to do, than what to do,” effectively summarizing the belief of allowing the wine to speak for itself. The grapes are sourced from the Santa Cruz Mountains and West Sonoma Coast for their Chardonnay, Pinot Noir, and Cabernet Sauvignon.
Peter Martin Ray Vineyards is not only a historic site, but also Ceritas’ highest elevation vineyard sitting above Saratoga. The Chardonnay vines were originally planted in the 1920s by their namesake winemaker, Martin Ray. It was a daring move at the time for there was no evident topsoil. Farming at this site is raw and the vines struggle, making for particularly complex Chardonnay. Cellar work is kept to a bare minimum.
