Gregoire Bonnet began this estate in 1862. After six generations in this family, the longevity of this wine is going nowhere. The fruit has always been sourced from their own family vineyards strewn across five Premier Cru and Grand Cru villages in the region of Champagne with home base in the village of Chamery. Gregoire was one of the first recoltant manipulants of the village, indicating that he grew his own fruit and bottled it as well. While the family name may have history attached to it, they continue to improve as they now implement organic practices. The name of their domaine has also evolved as Bonnet was the original name, though a woman of the name Ponson, with wine in her blood, married into the Bonnet family.
The idea behind a perpetual wine is that it’s never ending. It’s multi vintage using reserve juice, in this case helping the grower out during tough vintages when there’s a lesser yield. This Extra Brut uses the three classic varieties of Champagne with 40% of the wine from their reserve. The wine ages mostly in tank with a small bit that ages in oak. The juice ages for eight months on the lees and ages an additional four years in bottle before release.
