In four days time, she knew that she then wanted to study wine at university. Ironically, university did not help with her professional career, as everything she had learned was from her uncle. Undeterred, she began fresh with just one acre of abandoned vines, and grew. Her focus then became Frappatto and Nero D’avola, grown naturally and biodynamically. Not to be overshadowed by her uncle, Arianna has grown into her own person as a winemaker and received international acclaim as a young woman in the industry.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eSerracalcara is \u003c\/span\u003e100% Grillo\u003cspan\u003e, grown biodynamically on the rocky Serra San Bartolo ridge outside Vittoria in southeastern Sicily. The vineyard sits around \u003c\/span\u003e240 meters\u003cspan\u003e with southeast exposure, where white sand with iron deposits gives way after just 30–40 centimeters to compact calcarenite and ancient marine-derived marl, a distinctly limestone-driven site between Vittoria’s red-sand soils and the Iblei Mountains. The Grillo sees just a \u003c\/span\u003efew hours of skin maceration\u003cspan\u003e before pressing, then ferments at 22–23°C and ages for \u003c\/span\u003e8–9 months entirely in concrete\u003cspan\u003e, keeping the focus firmly on grape and site rather than oak.
