Anima Mundi comes from a theory by Plato called the “soul of the world,” thereby expressing the soul of Alt Penedes through soil, nature, climate, and human tradition. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eMade from both Macabeu and Xarel-lo, which are generally used in the production of Cava, but this goes into the natural sparkler known as a pet-nat.
