Alice hailed from Jura and Olivier was a Chablis native. When they met they already had a lot in common, being both from wine regions whose family participated in the industry. However, their commitment to sustainable farming and low intervention winemaking was a commonality they didn’t share with all of their classmates or fellow future vignerons.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThat commitment got them certified organic in 2005, after doing small changes like harvesting in smaller vessels to minimize damage by the grapes crushing themselves in big vats. They use gravity and\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003elater invested in a pneumatic press to ensure the gentlest pressing possible. At no point have they used SO2.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAll of Chablis is a calcareous zone, clay and limestone with fossils of oyster, urchins, bivalves and ammonites layered in throughout.
