Variety: Prié Blanc
Ermes Pavese is a youthful producer creating the ancient Prié Blanc variety in the region of Vallée d’Aosta. This valley has a fascinating location with a lengthy history. Located between the foothills of Mont Blanc near the French border, alongside the Dora Baltea River, a tributary of the Po river. The Pavese family’s headquarters and home are in the hamlet of La Ruine near the municipality of Morgex. The Prié Blanc variety has origins in the Vallée d’Aosta, but ancestry is possible from Switzerland or Spain. The weather conditions are extreme for growing grapes; tradition in this region is to train the vines using the low pergola system. This allows the vines to stay closer to the ground to capture the heat radiating from the soil. The foothills are steep enough that Ermes has opted to incorporate stepping stones into the side of the slopes in his vineyards.
