The vineyards are very high nearing 800 feet above sea level, often using narrow terraces held up by stone walls. The vines must survive in these mineral-rich soils, which thrive considering there is often no rain in summer. Many of the vineyards are surrounded by olive and hazelnut groves, all whilst growing at the base of Europe’s largest active volcano, Mount Etna.\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eSan Lorenzo is a single vineyard coming from the larger contrada of Randazzo. Fermented uses only indigenous yeasts and the skins are macerated in the wine for a total of about fifteen days before pressing. The juice ages in used puncheons for about 18 months before bottling.
