The winery is named for winemaker Filipa Pato, though the work is completed by both Filipa and her husband William Wouters. She was a chemical engineer graduate, though had a passion for the indigenous varieties of Bairrada, Portugal, her passion fueled by many international harvests. He was a sommelier and restaurateur. Together they create “wines without makeup” using biodynamic farming, minimal intervention in the cellar, and a shared passion for food and wine.
The three Bs in the name refer to the grape varieties—Baga and Bical—and Filipa’s home of Bairrada. Ironically, Bairrada can not be displayed on the label due to appellation laws, as the wine actually comes from Beiras. This is a traditional method sparkling (Champagne method) that's aged for nine months on their lees. Its value is remarkable for the quality delivered.
