They use gravity and\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003elater invested in a pneumatic press to ensure the gentlest pressing possible. At no point have they used SO2.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAll of Chablis is a calcareous zone, clay and limestone with fossils of oyster, urchins, bivalves and ammonites layered in throughout. Because of their transparent and low-intervention approach, their nine hectares in Courgis are probably the most representative of the raw terroir of the region.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eNo batonnage! No racking! This wine is as un-fussed with as all the selections at de Moor. Undergoing natural malolactic fermentation in stainless tanks, this Chardonnay hails from a small parcel in Auxerres. This new cuvee is a blend of Sauvignon Blanc and Gris from St. Bris, macerated Aligote, oh! and a few Chardonnay barrels that were found in the cellar. The Sauvignons are fermented in stainless tanks. This wild cuvee shows the maverick nature of the de Moors and their propensity towards the creative application.
