Didier’s wife, Helene, handles administration and sales. Although this is a small property – common in France – the Defaix family undertook an extensive study of their vineyard soils to better understand vine root systems and the impact of mechanized vineyard operations. This bottling, like their other Chablis wines, spends 8 months on its fine lees. While the duo does grows the Tuscan classic grape of Sangiovese, they also grow international varieties such as Merlot and Syrah, citing the grapes presence as an addition brought to the area during the Napoleonic wars. “Practical biodynamic” farming is by and large at the forefront of their terroir driven wines. The vineyards are sprinkled with indigenous herb and vegetable seeds at the start of each planting season to ensure a healthy ecosystem and soil structure. In addition to wine, Valgiano makes delicious wild honey and olive oil which we were lucky enough to get our hands on! \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003e‘Palistori” are the posts that you’d find at the end of any row of vines at Valgiano, weathered and crooked. Gregoire was one of the first recoltant manipulants of the village, indicating that he grew his own fruit and bottled it as well.  While the family name may have history attached to it, they continue to improve as they now implement organic practices. As the region of Champagne pivots its style in the wake of climate change, we see many other varieties being used, as well as a plethora of still wines. This still white utilizes all seven varieties allowed in Champagne. For this reason, the small 5,200 case winery produces some of the most collectible items out of Alsace.
