Recently, they started the three-year process of seeking biodynamic certification. In fact, they have become international icons for the natural wine movement in an area where the climate and soil can make organic practices difficult. They are based in Bourgueil in the Loire Valley and have an impressive spread of vineyards ranging in soils and vine age. \u003c\/span\u003e\u003cspan\u003eOne might say the innovative couple is well ahead of the game and doing it with charm and grace. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eCatherine’s project is the Vouvray wines. While she also vinifies this as a still wine, Dilettante is also made into a sparkling wine. It’s comparable to Champagne in both quality and style, though Chenin Blanc makes its voice known in this traditional method sparkler. To do this, everything comes down to the work in the vines. Jeremie is known for the amount of time he spends walking the parcels,  having eyes on his vines to understand and highlight growth year after year. This bottling of ‘Les Montys le Parc’ is from the cru Château-Thébau famed for its deep granite soils that are covered with a sandy-loam. These soils are igneous rocks that are incredibly dark in color and found deep on the ocean floor crust.
